Japan Green Tea "Buddha Ama Cha"


Sweet taste with a smooth note of anise. The leaves of this plant are plucked from August to October. The fresh leaves are dried in the sun and will be sprayed with water later on again. Then the leaves are stored in wooden bins for 24 hours where they start to ferment. After this time the fermented leaves are taken out of the bin and get rolled and dried. Freshly plucked leaves contain so called glucosides which do not have a sweet taste yet. The characteristic sweet taste with a touch of anise-taste only arises during the fermentation process where the substance "glucoside" is changed into "phyllodulcin". 

Preparation: 2'-3' in hot water (80℃ - 90℃)
