Beef, chicken, fish, lamb, mutton, or even prawns can be used for the meat. We recommend using some of this spice mix in a marinade with yogurt and salt. The active bacteria in the yogurt will aid in protein breakdown, keeping the meat moist and tender. Unlike citric acid, which is found in most lemony marinades, lactic acid in yogurt breaks down considerably slower, thus the risk of the marinade making the meat mushy is much lower.
