'Alas' is the Greek word for salt, derived from the Latin word 'als', meaning sea in Homer's poetry.

The characteristic pyramid-shaped crystals that rise to the top during the evaporation process of the seawater, are known as fleur de sel (flower of the salt) and are hand-harvested from the south shore of Crete.

While refined and industrialized salt has a high level of sodium and virtually no nutrients, Cretan sea salt is naturally high in iodine, nutrients, and minerals all of which are essential to health and the human body. 

When used in cooking, it adds a salty, airy aftertaste that cannot be compared with that of another fleur de sel from any other area of Greece.

Nowadays, apart from being used as a preservative like in the old days, it is widely known as finishing and garnishing salt, providing a delicious crunch as it enhances the flavor of soups, salads, fish, meat, fruit, vegetables, and even desserts.
