Wild thyme is one of the most frequent bushes in arid and rocky areas around the island of Crete. The warm climate, rich vegetation, and unique flowers provide ideal beekeeping circumstances.
It's unfiltered, unpasteurized, and it's not cooked to extreme degrees, so the enzymes and pollen are preserved.

Thyme honey color varies from light to amber in color, with an intense herbal and floral aroma, and a sweet complexity of flavors. It has a savory hint of thyme and a fresh, lingering taste.

Honey in general is a nutrient-dense food that contains enzymes, vitamins, and minerals, as well as anti-inflammatory, antioxidant, and antibacterial qualities. Vitamin B6, thiamine, riboflavin, pantothenic acid, and niacin are also present.

It can help with bloating, constipation, and acid reflux, on top of alleviating sore throats, coughs, and colds, along with maintaining a healthy immune response, minimizing allergies, combating free radical damage, and overcoming sweet cravings.

Pure honey crystallizes as a natural process, between 6 and 18 months after manufacturing, depending on the quality and storage circumstances. Some crystallize completely, while others just partly.
◉ Simply place a jar of crystallized unheated honey in a warm water bath at 40ºC for around 15 minutes to convert it back into a liquid.
